2024年春の北陸新幹線開業に向け、福井県の伝統工芸の認知拡大を目指したプロジェクトとして、新プロダクトを総合プロデュースしました。その一環として、これらのプロダクトを体験できるPOP UPレストラン『"圓" Pop-up Restaurant』を2022年1月22日（土）、UNKNOWN HARAJUKUに期間限定でオープンしました。
このレストランでは、伝統工芸品を体感していただくため、コース料理と日本酒のペアリングを提供しました。料理は二子玉川「すし喜邑」、広尾フレンチ「Ode」の料理人が担当し、日本酒ソムリエには千葉麻里絵氏を迎えました。
In preparation for the opening of the Hokuriku Shinkansen in spring 2024, we produced a new range of products aimed at raising awareness of Fukui Prefecture’s traditional crafts. As part of this initiative, we opened a limited-time pop-up restaurant, "En" Pop-up Restaurant, on Saturday, January 22, 2022, at UNKNOWN HARAJUKU.
The restaurant offered an experience of traditional crafts through a pairing of course meals and sake. The dishes were created by chefs from Futako-Tamagawa’s “Sushi Kimura” and Hiroo’s French restaurant “Ode,” with sake pairings curated by sake sommelier Marie Chiba.
